1 tb Olive oil
1 md Vidalia or other
- sweet onion; chopped
3 c Savoy cabbage;
- cored, finely shredded
Salt
Black pepper; freshly ground
Enriched Pizza Dough
Preheat the oven to 450?F.
Heat the olive oil in a large skillet over medium heat. Add the
cabbage, cover, and cook until tender, about 7 minutes. Season with
salt & pepper to taste and continue to cook, uncovered, until the
vegetables are slightly caramelized, about 7 minutes. Set aside.
Punch the dough down. On a lightly floured work surface, roll out or
stretch the dough into a circle about 1/4" thick. Lightly oil a pizza
pan or baking sheet and place the dough on it, stretching it to fit.
Bake on the bottom oven rack for 8 minutes.
Remove from the oven and top with the cabbage mixture, spreading it to
within 1/2" of the edge. Bake until the crust is golden brown, 10 to
12 minutes. Serve hot.
